The Monk's cheese dated back to the 1700s when the shepherds, in monk's looking hooded cowls, started producing and selling this melon shaped, semi-hard cheese. Provolone requires a minimum 20% of Agerolese cow milk and be matured to at least 180 days. Having a sweet, buttery flavour, with a pleasantly piquant aftertaste that pairs best with aged red wine.
